Chicken breast with parmesan crust and salad

Ingredients for 4 servings:

  • 10 tbsp mayonnaise
  • 8 tbsp Parmesan
  • 4 chicken breasts
  • 4 tsp breadcrumbs (preferably homemade from ciabatta)
  • 1 head of oak leaf lettuce
  • 6 handfuls of spinach, young
  • 1 clove(s) garlic
  • 1 tsp lemon juice
  • ¼ tsp mustard, hot
  • 1 egg(s)
  • 25 g Parmesan, grated
  • 125 ml olive oil
  • Salt
  • pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Recipe from my cousin in the USA

Mix the Parmesan cheese with the mayonnaise. Then spread this mixture on the chicken breasts and scatter the breadcrumbs on top. Bake everything in the oven at 200°C for 20 minutes. Prepare the Caesar dressing for the salad as follows: Whisk all ingredients together with a whisk or electric mixer until creamy. Season to taste and thin with a little lemon juice or water, if desired. Wash the lettuce, spin dry, and tear into bite-sized pieces. Arrange the salad on four plates, add the chicken, and drizzle with the dressing.
