Chicken breast with roasted peanuts

Ingredients for 2 servings:

  • 2 chicken breasts
  • 300 g peanuts, unsalted
  • 2 tsp cornstarch (Mondamin)
  • 2 tbsp soy sauce
  • 100 ml oil (walnut oil)
  • 2 tbsp cognac
  • 1 bell pepper(s), red
  • 100 ml chicken broth
  • 1 bunch spring onion(s), the green part
  • 2 cloves garlic
  • 1 tbsp oil (sesame oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the chicken breast and lightly fry in walnut oil. Add the peanuts and toast them. Mix the Mondamin with 2 tablespoons of water and soy sauce and add to the pan. Add the chicken stock, cognac, and diced bell pepper. Cook for another 5 minutes. Remove from the heat and stir in the julienne-cut onion greens and the crushed garlic. Finish with sesame oil.
