Julie's Toast – Bruschetta with Avocado

Ingredients for 4 servings:

  • 8 slice(s) toast bread, wholemeal
  • 1 avocado(s), ripe
  • 2 large tomatoes
  • 1 large onion(s), finely chopped
  • 6 tbsp olive oil
  • 5 tbsp tomato paste
  • 1 tsp basil, dried
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the avocado, remove the pit, and cut the flesh into small cubes. Wash, deseed, and finely dice the tomatoes. Lightly salt both. Heat 5 tablespoons of oil in a small pan and briefly sauté the onion. Add the tomato paste and mix well. Season with basil, salt, and pepper. Spread the onion mixture onto the toasted slices of bread, top with the avocado and tomato cubes, and finish by lightly drizzle with the remaining olive oil. Also delicious on toasted baguette slices.
