Ingredients for 2 servings:
- 2 chicken breasts
- 1 onion(s)
- 1 large leek(s)
- 1 large apple
- 200 ml chicken stock or wine
- Oil for frying
- salt and pepper
- e.g. chili
- lemon zest
- 2 slices of Gouda
- possibly flour butter
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Chicken breasts with leek and apples, gratinated with cheese
Place a shallow casserole dish in the oven and preheat it to 80°C. Season the chicken breasts with salt and pepper. Heat a pan until very hot, then add a little oil or clarified butter and immediately sear the chicken breasts for 2 minutes on each side. Then place them in the heated casserole dish in the oven. Slice the onion and leek into rings. Dice the apples. Fry the chopped onion in the pan in which the breasts were fried. Add the chopped leek, then add the apples a few minutes later, season with salt and pepper. Cover and simmer for about 10 minutes. Add stock or wine. Add the lemon zest and a little more chili, if desired. Thicken with flour and butter, if desired. Stir carefully to ensure the apple pieces remain intact, and season to taste. Remove the casserole dish with the chicken breasts from the oven. If they aren’t cooked through yet, slice the chicken breasts flat into two breast-sized pieces, arrange them neatly in the casserole dish, and top with the leek and apple mixture. Top with cheese and bake in the oven until golden brown. Delicious with rice and potatoes.
