Ingredients for 4 servings:
- 200 g chicken breast fillet(s)
- 2 tbsp olive oil
- 1 garlic clove(s)
- some salt
- 2 tbsp butter
- 2 tbsp flour
- ¼ liter of milk
- salt and pepper
- Parsley or chives, fresh
- nutmeg
- Breadcrumbs
- Flour
- 2 eggs

Chicken croquettes -Tapas-
Cut the chicken into large cubes and fry in olive oil over low heat. Pound the garlic clove with salt (or roughly chop it, sprinkle with salt, and mash it well with a fork), add it to the chicken, and let it roast briefly. Now either finely chop the meat with a knife or roughly chop it in a blender (not “baby food” – it should still be chunky). Heat the butter in a saucepan, sprinkle in the flour, and sauté briefly. Stir in the milk in small sips, stirring constantly, until a firm, choux pastry-like mixture forms. Remove the pan from the heat and stir in the chopped chicken. Season with salt, pepper, nutmeg, and the chopped herbs. Refrigerate the mixture for 30 minutes. After cooling, form it into walnut-sized balls. Roll them first in flour, then in beaten egg, and finally in breadcrumbs. Shortly before eating, fry the croquettes in hot oil for 3-4 minutes and drain on kitchen paper. Tip: Croquettes can easily be prepared a day in advance and then fried on the day of eating!
