Chicken fillets with honey and mustard dip

Ingredients for 2 servings:

  • 2 chicken fillets
  • Salt
  • pepper
  • 2 eggs
  • 2 tbsp flour
  • Olive oil, for frying
  • 50 g honey
  • 1 tsp mustard, hot
  • 1 tsp balsamic vinegar
  • 1 shot of dry sherry

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the chicken fillets into approximately 2.5 x 2.5 cm cubes, then place them in a bowl and season with salt and pepper. Whisk the eggs, pour them over the meat, and mix. Sprinkle the flour over the chicken and mix well. Add enough flour so that the meat no longer drips. Heat the olive oil in a pan and cook the meat for about 15 minutes, stirring occasionally. Remove the pan from the heat and season the meat with salt and pepper. Combine the honey with the mustard, vinegar, and sherry and serve separately with the meat.
