Chicken filling for tortillas

Ingredients for 4 servings:

  • 1 tbsp oil
  • 4 chicken breast fillets
  • 400 g pizza tomatoes
  • 1 small can of corn kernels
  • 25 ml salsa
  • 1 clove(s) garlic, crushed
  • ½ bag(s) of taco seasoning
  • e.g. tortilla(s)

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the chicken breast fillet and dry thoroughly. Then fry both briefly in oil. Add the pizza tomatoes, salsa, spices, and garlic to the pan, leaving plenty of time between each addition, and mix well. Cover the pan and let everything simmer for about 15 minutes. Shred the meat, preferably with two spatulas, while it’s still in the sauce, and let everything simmer a little longer, until the sauce has almost evaporated. Divide the meat sauce among the tortillas. This sauce makes enough for 12 tortillas, and any leftovers can be frozen and used, for example, as a pizza topping.
