Ingredients for 4 servings:
- 2 onions
- 30 ml tomatoes, pureed
- 50 g cashew nuts
- 1 ½ tsp garam masala
- 1 tsp chili powder
- 2 clove(s) garlic, squeezed
- 1 tbsp lemon juice
- ¼ tsp turmeric
- 1 tsp salt
- 1 tbsp yogurt
- 2 tbsp vegetable oil
- 2 tbsp coriander, fresh, chopped
- 450 g chicken breast
- 200 g mushrooms
- 300 ml water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Peel and quarter the onions and puree them in a food processor along with the garlic, cashews, crushed tomatoes, yogurt, and all the spices. Heat the mixture in a saucepan and add the mushrooms and the diced chicken breast along with half of the cilantro. Simmer for about 5 minutes, then add the water. Let it simmer for another 10 minutes, until the chicken is cooked through and the sauce has the right consistency. Serve with rice, of course.
