Ingredients for 2 servings:

  • 2 char fillets, fresh, without skin
  • 6 tbsp breadcrumbs from black bread
  • 1 garlic clove(s)
  • 3 sage leaves, fresh
  • 1 pinch orange zest, dried
  • 1 juniper berry(s)
  • salt and pepper
  • 6 tbsp extra virgin olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

A recipe from Umbria

Cut the fish fillets into pieces and place them in a baking dish greased with a tablespoon of olive oil. Peel and grate the garlic clove, and finely chop the sage leaves. In a mortar and pestle, finely grind the chopped sage, grated garlic, crushed juniper berries, and orange zest with the remaining oil. Season with salt and pepper. Mix this mixture well with the breadcrumbs. Add a little more oil if desired, then spread it evenly over the fish. Bake in a preheated oven at 180°C (top/bottom heat) for no longer than 12 minutes, until the crumb mixture becomes slightly crispy.
