Chicken in Fruity Hot Coconut Sauce

Ingredients
 

  • 200 g Chicken
  • 1 Onion
  • 0,5 Yellow pepper
  • 0,5 can Corn
  • 1 Fruit cocktail, mixed
  • 100 ml Coconut milk
  • Plant cream
  • Salt, white pepper, paprika
  • Chicken broth, grained
  • 120 g Rice

Instructions
 

  • Fry the chicken vigorously in a little vegetable cream, then remove from the pan and cut into small strips. Peel and cut the onion into fine cubes and fry as well. Then remove from the pan.
  • Core the peppers and cut into small cubes. Drain the corn. Now heat both a little and then add the onions, chicken strips and the fruits of the fruit cocktail.
  • Now season the whole thing with white pepper, paprika and chicken stock and deglaze with coconut milk. You can use a few strokes of the white pepper - the slight spiciness goes very well with the otherwise rather sweet and fruity dish. Stir in the fruit juice from the fruit cocktail as you like and season to taste.
  • Goes well with rice.
