Chicken in Fruity Hot Coconut Sauce

- 200 gram Chicken
- 1 Onion
- 0,5 Yellow pepper
- 0,5 Can Corn
- 1 Fruit cocktail, mixed
- 100 ml Coconut milk
- Plant cream
- Salt, white pepper, paprika
- Chicken broth, grained
- 120 g Rice
- Fry the chicken vigorously in a little vegetable cream, then remove from the pan and cut into small strips. Peel and cut the onion into fine cubes and fry as well. Then remove from the pan.
- Core the peppers and cut into small cubes. Drain the corn. Now heat both a little and then add the onions, chicken strips and the fruits of the fruit cocktail.
- Now season the whole thing with white pepper, paprika and chicken stock and deglaze with coconut milk. You can use a few strokes of the white pepper – the slight spiciness goes very well with the otherwise rather sweet and fruity dish. Stir in the fruit juice from the fruit cocktail as you like and season to taste.
- Goes well with rice.
