Chicken in Juniper Cream

Ingredients
 

  • 1 whole Chicken
  • 300 ml Broth
  • 2 Onions
  • 12 Juniper berries
  • 1 Clove of garlic
  • 1 Bay leaf
  • 40 g Butter
  • 2 pinches Salt + pepper
  • 1 cup Cream
  • 2 tbsp Oil

Instructions
 

  • Cut the onions into quarters, wash the chicken, dry them. Mash the garlic with salt + pepper, juniper berries. Crumble the bay leaf, mix everything with the oil. Rub the chicken inside + outside with it.
  • Put in a roasting pan, cover with butter and fry in the preheated oven at 200 degrees for 35 minutes. Then add the onions and the broth. Fry for another 1.2 hours, pour more broth over them. Remove the chicken and keep warm.
  • Put the cream in the roaster and reduce a little with sauce stock. In addition new potatoes and salad.
