Chicken in oriental peanut sauce

Ingredients for 2 servings:

  • 450 g chicken breast
  • 1 large onion(s)
  • 150 g peanut puree or peanut butter
  • 2 tbsp sesame oil
  • 1 can of tomatoes, chopped
  • 150 ml vegetable stock
  • 1 tsp garam masala
  • pepper
  • chili flakes
  • ½ bunch parsley

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

easy and quick to make – yet sophisticated in taste

Cut the chicken breast into bite-sized pieces and fry in sesame oil. Add the diced onions, stirring frequently until lightly browned. Sprinkle with garam masala and sauté briefly. Deglaze with the tomatoes and stir in the peanut butter. Add enough vegetable stock to make a nice sauce. Season to taste with pepper and chili flakes. If the stock wasn’t very salty, add more salt if desired. Simmer everything together until the chicken is cooked. Sprinkle with freshly chopped parsley before serving. Serve with rice, millet, Ebly, or simply baguette.
