Chicken in peanut sauce

Ingredients for 3 servings:

  • 500 g chicken breast fillet(s)
  • 1 onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • 1 can of tomatoes, chopped
  • 1 tbsp tomato paste
  • n. B. water
  • 2 tbsp peanut butter, creamy, without pieces
  • 1 tbsp oil
  • salt and pepper
  • Cayenne pepper
  • Sugar

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Heat the oil in a large pot over high heat. Meanwhile, cut the chicken into bite-sized pieces. Sear the chicken in the pot over high heat until browned on all sides. Depending on the size of the pot, you may need to sear the meat in two batches, as chicken is much more tender when it has room to sear. Set the meat aside. Sauté the onions and garlic in the same pot over medium heat. Add the chopped tomatoes and tomato paste. Simmer for a few minutes. Add the chicken and 2 heaped tablespoons of peanut butter, stir well, and reduce the heat to low (this is very important, as otherwise the peanut butter will have a burnt taste). Add water until the sauce reaches the desired consistency. Season with salt and pepper and a small pinch of sugar, and simmer for about 15 minutes over low heat. This dish goes best with rice or (vegetable) couscous. If you like, you can also add 2-3 finely chopped sweet potatoes or bell peppers to the sauce and let them cook.
