Chicken meatballs, Asian-inspired, low in calories

Ingredients for 4 servings:

  • 400 g minced meat, from turkey or chicken
  • ½ mango(s), peeled, cut into small pieces
  • 1 pepper, cleaned, cut into small cubes
  • 1 piece(s) ginger, walnut-sized, cut into small pieces or grated
  • 1 bunch of spring onions, cleaned, cut into small cubes or slices
  • 1 small bell pepper(s), green, maybe only 1/2, clean, finely dice
  • ½ bunch coriander, plucked from the stems and finely chopped
  • 1 small egg(s), size M
  • 1 tsp, heaped curry powder
  • 1 tsp salt
  • n. B. Pepper, freshly ground, depending on the spiciness of the pepper
  • some oil, neutral
  • e.g. roasted sesame seeds

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

with mango, curry and coriander

Knead all ingredients into a meat dough and season to taste. The meat dough is very moist and light, so dice everything very finely so it holds together. Form eight meatballs from the dough and, if you like, roll them in sesame seeds before frying. Heat a little oil in a non-stick pan and fry the meatballs over low heat for about 15 minutes. Turn once. If the heat is too high, the meatballs will burn easily. Serve with basmati rice, a curry sauce cooked with the other half of a mango, and a green salad.
