Chicken on a bed of vegetables

Ingredients for 2 servings:

  • 1 chicken
  • 250 g potatoes
  • 3 bell peppers, red, green and yellow
  • 2 onions
  • 2 garlic cloves
  • 2 bay leaves
  • salt and pepper
  • rosemary

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 35 minutes

Rub the chicken inside and out with salt, pepper, and paprika and roast in a roasting pan at 200°C for 20 minutes. In the meantime, peel the potatoes and cut them into wedges, roughly dice the peppers and onions, and finely dice the garlic. After 20 minutes of roasting, add the potatoes to the chicken and brush the chicken with the roasting fat. After another 30 minutes, add the peppers, onions, and garlic and brush the chicken again with the resulting roasting fat. Season everything with rosemary and bay leaves and roast for another 15 minutes. Disassemble the chicken, season the vegetables with salt and pepper, and serve everything together.
