Elderberry muffins

Ingredients for 1 servings:

  • 200 g flour
  • 50 g fine oat flakes
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 150 g sugar
  • 150 g butter, soft
  • 1 cup sour cream
  • 150 g elderberries
  • 1 pinch of salt
  • 1 packet of vanilla sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 200°C. Sift the flour into a bowl and briefly mix with the finely rolled oats, baking powder, and baking soda. Gently remove the elderberries from the stems with a fork, rinse thoroughly, and let them drain in a sieve. Lightly beat the eggs with a pinch of salt. Add the sugar, softened butter, sour cream, and vanilla sugar and mix well. Then stir in the flour mixture. Finally, carefully fold the elderberries into the batter and immediately fill the muffin cups 3/4 full with the batter. Bake at 180°C top/bottom heat for 20-25 minutes until golden brown.
