Chicken Peri Peri

Ingredients for 4 servings:

  • 2 kg chicken pieces
  • 400 ml tomato ketchup
  • 350 ml fruit chutney
  • 125 ml Worcestershire sauce
  • 80 ml lemon juice
  • 4 cloves garlic, pressed through a press (or more)
  • Cayenne pepper or peri peri to taste

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the chicken pieces in a single layer in a roasting pan. Dust with peri-peri. Mix all the other ingredients in a measuring jug and pour over the chicken pieces, ensuring all pieces are covered in the sauce. Bring to a boil, then reduce the heat and simmer gently until the chicken pieces are tender. About 40 to 45 minutes. If the sauce is too thin, simply reduce it a little at the end. Serve with basmati rice and a green salad or green beans. Alternatively, you can also cook the dish in the oven. Bake at 200°C until the chicken pieces are tender, about 1 hour.
