Ingredients for 2 servings:
- 500 g chicken, cut into pieces
- 2 large onions, cut into rings
- 2 large tomatoes, chopped
- 500 g pumpkin flesh, cut into pieces
- 1 garlic clove(s), squeezed
- 1 ½ tbsp curry powder
- oil
- salt and pepper
- Coriander leaves
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Heat some oil in a pan and fry the onions and crushed garlic for 5 minutes. Add the curry powder and fry for another minute. Add the chicken pieces, tomatoes, and pumpkin, stir, and season with salt and pepper. Stir well and simmer over low heat for about 30 minutes. Finally, sprinkle freshly chopped coriander over the curry and serve with rice.
