Chicken salad with curry

Ingredients for 2 servings:

  • 1 chicken breast fillet(s)
  • 1 small can/mandarin orange(s)
  • 3 tbsp mayonnaise
  • 2 tbsp curry powder
  • ½ tsp salt
  • some broth, granulated

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 35 minutes

Combine some stock powder with water in a pot and cook the chicken breast for about 20 minutes. The chicken should be completely covered with stock. Remove the meat from the stock, let it cool, and cut it into small cubes. Mix the mayonnaise with about 3/4 of the mandarin orange juice, the salt, and the curry powder. This should form a thick, spicy sauce. Add a little more mayonnaise or juice if necessary. Mix the meat and mandarin oranges with the sauce and let it simmer for about 2 hours.
