Chicken Saltimbocca

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 4 slices of Italian ham (Prosciutto)
  • 8 sage leaves
  • 1 ball(s) of mozzarella
  • 4 tbsp plum chutney (pureed tomato will also work)
  • Basil, fresh
  • olive oil
  • Salt and pepper, freshly ground

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cut a slit in the side of the chicken breast fillets so they can be opened. Lightly season with salt and pepper, drain the mozzarella, and finely dice it. Fry the fillets in a pan until golden brown, then place them in a shallow baking dish. Open the fillets and add the sage leaves. Spread chutney on the closed fillets, then distribute the mozzarella, and finally add the ham. Bake in the oven until the cheese is melted and the ham is nice and crispy. Garnish with basil before serving. Serve with baked potatoes in their skins, a green salad, and a white wine.
