Chicken schnitzel with peanut breading

Ingredients for 4 servings:

  • 4 chicken schnitzels
  • 200 g peanuts, roasted, salted
  • 4 tbsp flour
  • 1 tbsp sugar
  • 2 eggs
  • Milk
  • Breadcrumbs
  • pepper
  • chili powder
  • vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Finely chop the peanuts in a food processor and mix with the flour and sugar. Mix the eggs with a little milk. Season the washed chicken cutlets to taste (since the peanuts are salted, I didn’t add any more salt). Coat the chicken in the egg mixture, then in the peanut mixture, pressing the mixture down firmly. Then coat the chicken again in the egg mixture and in the breadcrumbs, pressing the mixture down firmly. Fry the cutlets in hot oil in a pan until golden brown.
