Chicken skewers

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 bell pepper(s), yellow
  • 1 red bell pepper(s)
  • 100 ml olive oil
  • 1 lemon(s)
  • 1 tsp thyme, fresh
  • salt and pepper
  • 8 sprig chervil

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 5 minutes

For the marinade, combine olive oil, lemon juice, thyme, a pinch of salt, and a little pepper in a bowl. Add the diced chicken, stir, cover, and refrigerate for 30 minutes. Wash the peppers, pat dry, and cut into pieces. Thread the red peppers, meat, and yellow peppers onto skewers, alternating between the red and yellow peppers, starting and ending with the peppers. Grill for 10 minutes under the oven broiler or 15 minutes on the charcoal grill. Place on a serving plate and garnish with chervil.
