Chicken soup

Ingredients for 4 servings:

  • 1 soup chicken, or 1 packet of chicken giblets
  • 2 bunch soup vegetables
  • 1 bunch lovage
  • 1 bunch of parsley
  • Salt
  • some peppercorns
  • some allspice
  • n. B. water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 15 minutes

Place the chicken or giblets in a pot with the allspice and peppercorns and add enough salted water to cover the chicken (at least 2 liters). Bring to a boil and simmer for about 45 minutes. In the meantime, chop the vegetables. Remove the chicken from the pot, remove the meat from the bones, and cut into bite-sized pieces. Add the vegetables to the pot and simmer for about 10 minutes, until tender. Add the meat to the soup. Add the chopped lovage and parsley and season again with salt and pepper. Serve with tagliatelle or spaetzle. Note: We also add homemade egg custard to the soup.
