Chicken, spinach and feta sauce

Ingredients for 3 servings:

  • 150 g butter
  • 1 onion(s)
  • 1 clove(s) garlic
  • 2 tbsp flour
  • 350 ml milk
  • 250 g creamed spinach or leaf spinach, frozen
  • 1 tbsp oil
  • 250 g chicken
  • 350 g pasta of your choice
  • salt and pepper
  • nutmeg
  • Lemon juice, fresh
  • 1 pack of feta cheese

Melt the butter in a small saucepan. Briefly sauté the finely chopped onion and garlic. Then add the flour and mix well. Add the milk to the flour mixture and stir vigorously with a whisk until smooth. Then add the frozen spinach and simmer over low heat. If the mixture becomes too thick, add milk and stir frequently. This depends on the butter-to-flour ratio. Stir occasionally to prevent burning. Meanwhile, heat a pan with oil and brown the finely chopped chicken. Bring a pot of water and salt to a boil. Add the pasta and cook until al dente. When everything is ready, add the chicken to the sauce. Season with salt, pepper, nutmeg, and plenty of lemon juice. Crumble the feta cheese and sprinkle it over the pasta and sauce.
