Apple bread

Ingredients for 1 servings:

  • 750 g apples, preferably Boskoop
  • 500 g flour
  • 150 g sugar
  • 200 g hazelnuts, whole
  • 150 g raisins, or other dried fruits as desired
  • 1 sachet of baking powder
  • ½ bag of gingerbread spice
  • 1 tbsp baking cocoa
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Grate the apples with the skin on. Combine the flour, sugar, baking powder, and cocoa powder in a bowl and mix everything together. Add the apples and mix well. Fold in the nuts and raisins (or other dried fruit). Either place the dough on a baking sheet or butter a loaf pan and add the batter. Bake in the oven at 200°C (top/bottom heat) for about an hour. Please note that every oven bakes differently. Check after about 50 minutes to make sure the bread isn’t getting too brown. If so, cover with aluminum foil. Tip: I take the bread out of the pan and put it back in the oven while it’s still warm, along with the rack.
