Chicken strips with fruity-spicy mango sauce

Ingredients for 2 servings:

  • 400 g chicken breast
  • 2 cloves garlic
  • 1 large red chili pepper(s)
  • 2 tsp honey
  • 1 mango(s)
  • 5 spring onions
  • 2 tbsp mango chutney
  • oil
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Rinse the chicken breast and pat dry, then cut into thin slices. Finely chop the garlic or press it through a garlic press. Wash, deseed, and finely chop the chili pepper. Mix the meat pieces, garlic, and chili cubes with the honey and set aside. Peel the mango, remove the flesh from the stone, and cut into 1 x 1 cm cubes. Trim the spring onions and finely slice them. Heat the oil in a pan, fry the white spring onion rings with the meat for about 3 minutes, then season with salt. Add the mango chutney and 4 tablespoons of water, simmer for another 2-3 minutes, then stir in the mango cubes. Cook over low heat with the lid closed for 4 minutes. Stir in the green spring onion rings before serving. Serve with noodles or rice.
