Ingredients for 2 servings:
- 400 g chicken schnitzel or breast
- 350 g tomatoes
- 300 g zucchini
- 1 onion(s)
- 1 tbsp oil
- ½ bunch basil
- 2 tbsp balsamic vinegar
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the chicken into thin strips. Score the tomatoes crosswise, place them in a bowl, and pour hot water over them. Then peel and dice. Wash the zucchini and dice it. Peel and finely dice the onion. Heat the oil in a pan. First, fry the chicken strips. Then add the vegetables and simmer until they become slightly creamy. Season with salt, pepper, and balsamic vinegar. Meanwhile, wash and dry the fresh basil. Pick off the leaves and finely chop them. Stir them into the shredded meat just before serving. Fresh baguette goes well with it.
