Ingredients for 4 servings:
- 4 chicken breast fillets, approx. 200 g each
- 8 slices of bacon
- some olive oil for brushing
- 4 tomatoes, halved
- 4 bell peppers, red and yellow, roughly diced
- 6 potatoes, cut into wedges
- 4 onions, quartered
- salt and pepper
- 3 tbsp olive oil
- 1 tbsp herbs de Provence
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
a complete dish from the oven
Combine the marinade ingredients and stir into the vegetables. Spread the vegetables on a baking sheet. Season the chicken breast fillets with pepper and salt and top each with two slices of bacon. Place the fillets on top of the vegetables and brush with a little olive oil. Bake at 180°C for about 30-40 minutes. We like to serve it with my yogurt, mint, and lemon sauce. Tip: You can also use other types of vegetables.
