Chicken thighs on leek

Ingredients for 4 servings:

  • 4 chicken legs
  • 10 stalk(s) leeks
  • Soy sauce
  • Spice mix for chicken

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the leeks and cut into strips. Place them in a large baking dish. Rub the chicken thighs over the leeks with soy sauce and then season with chicken seasoning. This will allow any excess seasoning to fall directly into the leeks. Arrange the thighs, top side down, in the baking dish. Preheat the oven to 200°C fan/convection oven and, once the dish has reached temperature, place it in the oven. After 25 minutes, turn the thighs over and give the leeks a little stir. Then bake for another 25 minutes on the other side. Then turn the broiler on for about 10 minutes. Serve immediately. This recipe only works with chicken thighs because they release enough juice for the leeks. This is a recipe from Greece, super delicious and quick to make. Tip: I always freeze fresh chicken thighs and place them frozen on top of the leeks – this makes the leeks soft and prevents the chicken from becoming too dry.
