Ingredients for 4 servings:
- 4 chicken thighs, seasoned or seasoned yourself
- 4 small potatoes
- 4 small sweet potatoes
- 6 carrots
- salt and pepper
- olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes
Cut the vegetables into wedges, toss in olive oil, and season with salt and pepper. Arrange the wedges on an ovenproof dish. Place the chicken thighs on top and cook in an oven preheated to 200°C (400°F) for 1 to 1 1/2 hours, depending on the size of the thighs. Tip: Serve the dish with red cabbage if desired, or make a sauce. We accidentally added a generous amount of olive oil to the vegetables, but that was enough for us.
