Chicken wings with ginger – hoisin – marinade

Ingredients for 4 servings:

  • 40 chicken wings
  • 4 tbsp ginger root, finely chopped
  • 4 garlic cloves, finely chopped
  • 12 tbsp hoisin sauce
  • 2 tbsp chili sauce, hot
  • 2 tbsp soy sauce, dark
  • 2 tbsp honey
  • 2 tbsp water
  • Sugar

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 35 minutes; Total time approx. 1 day 1 hour 5 minutes

In a bowl, combine the ginger, garlic, hoisin sauce, chili sauce, soy sauce, sugar, and water. Place the chicken wings in a plastic bag and add the marinade. Seal the bag and mix thoroughly. Place in the refrigerator to marinate for at least 1 hour, but preferably 24 hours. Preheat the oven to 180°C (top/bottom heat), place the chicken wings on a grill rack, and bake for about 35 minutes, until the wings are cooked through and nicely browned. They taste great both hot and cold.
