Ingredients for 10 servings:
- 1,000 g minced beef
- 1 large onion(s)
- 3 eggs
- e.g. salt and pepper
- 1 tsp mustard, hot
- 150 g clarified butter
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes
Beat the eggs. Finely chop the onion. Melt the clarified butter. Knead the ground beef with the eggs, onions, clarified butter, mustard, salt, and pepper. Now form into even, thin patties, each weighing 100g, and freeze for 3 hours. Remove from the freezer and sear on both sides, then finish cooking at a lower temperature.
