Ingredients for 4 servings:
- 4 chicken legs
- 2 tbsp oil
- 200 g apricot(s) from the can
- 1 onion(s), sliced
- 1 garlic clove(s)
- 1 tbsp butter
- 200 ml apple juice or multivitamin juice
- 2 tbsp soy sauce
- 3 tbsp ketchup
- 1 tbsp mustard
- 1 bell pepper(s)
- salt and pepper
- 200 g rice
- salt water

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
This recipe is from my Russian friend. She got it from a Russian cookbook.
First, preheat the oven to 180°C. Meanwhile, wash the chicken thighs, pat them dry, and brush them with a little oil, season with salt, and pepper. Then bake in the oven for 30 minutes. For the sauce, sauté the onion and garlic with butter in a pan. Add the apricots, apple juice, ketchup, mustard, and soy sauce. Cook for 10 minutes, then season with salt and pepper. After 20 minutes, add half of the sauce to the chicken thighs. Slice the bell peppers and add them to the chicken, then add the remaining sauce for the remaining 10 minutes. Finally, cook the rice in salted water according to the package instructions. I think the portions are quite small. My friend, for example, tipped the rice into a small espresso cup and then onto a plate (for a nice shape) and served it with the chicken thighs and sauce.
