Chicken with honey-mustard glaze

Ingredients for 5 servings:

  • 12 chicken legs
  • 2 anise
  • 2 cloves garlic
  • 1 small onion(s), halved
  • 1 carrot(s), sliced
  • 2 bay leaves
  • 2 tbsp honey
  • 2 tbsp coarse-grained mustard
  • 2 tbsp olive oil
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the thighs in a large pot with the aniseed, garlic, onion, carrots, and bay leaves. Cover with cold water, add 1 teaspoon of salt, and bring to a boil. Simmer for 5 minutes, then skim off the fat. Simmer gently for another 30 minutes. Allow the meat to cool in the liquid, then remove the meat from the liquid along with the bay leaves and some of the aniseed. Preheat the oven to 200°C (400°F). Place the meat, skin-side up, in a suitable dish. Mix the honey, mustard, and olive oil and pour half over the meat. Season and bake for 10 minutes. Then pour the remaining marinade over the meat and bake for another 15-20 minutes.
