Chicken with papaya

Ingredients for 3 servings:

  • 1 chicken (roast chicken)
  • Salt
  • pepper
  • 250g papaya
  • 340 g pineapple, in pieces (from the can)
  • 5 tbsp orange juice
  • 1 tbsp lemon juice
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tbsp butter
  • 2 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse the chicken with cold water and pat dry thoroughly. Cut into pieces, season with salt and pepper. Peel, deseed, and dice the papaya. Drain the pineapple pieces. Mix the orange juice with the lime juice, sugar, soy sauce, and cornstarch. Heat the butter and oil in a pan or roasting pan and fry the chicken pieces for 5 minutes on each side. Add the papaya and pineapple cubes, pour in the sauce, bring to a boil once, and simmer, covered, for about 20 minutes. Serve with rice.
