Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 1 tbsp chili flakes
- 1 tbsp curry powder
- 400 g rice or rice noodles
- 2 tbsp sesame oil
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- 2 tbsp water, optional
- 1 organic lime(s)
- 3 spring onions
- Oil for frying
- n. B. Sesame for sprinkling
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Cut the chicken breast fillet into small cubes and mix with the chili flakes and curry powder. Cook the rice or rice noodles according to the package instructions. Mix the sesame oil, honey, soy sauce, and peanut butter, adding 2 tablespoons of water if desired. Zest the lime and squeeze the juice, then add it to the peanut sauce. Peel and finely chop the spring onions. Lightly fry the chicken in a little oil, add the peanut sauce, and simmer, stirring, until reduced. Add the prepared spring onions and fry briefly. Serve the chicken with rice, lime zest, and sesame seeds.
