Mediterranean turkey with gnocchi, zucchini, tomatoes, chanterelles and feta

Ingredients for 12 servings:

  • 1 kg zucchini
  • 1 onion(s)
  • 300 g feta cheese
  • 750 g cocktail tomatoes
  • 1 ½ kg turkey breast
  • 30 g chanterelles, dried
  • 20 g parsley
  • 10 g sage
  • 2 tsp cayenne pepper
  • 4 tbsp flour
  • 2 tbsp oil
  • 1 ½ kg gnocchi
  • 4 garlic cloves
  • 200 ml broth
  • 200 g sweet cream
  • 250 ml coconut milk
  • 2 tsp curry powder
  • ½ tsp cinnamon powder
  • 1 tsp chili powder
  • 1 tsp nutmeg, freshly grated
  • 1 tsp pepper
  • 1 tsp salt

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours

Dice the zucchini, onion, and feta cheese, halve the tomatoes, and slice the turkey breast into strips. Soak the chanterelles in water, then chop them finely. Finely chop the parsley and sage. Mix the turkey strips with the cayenne pepper and flour. Heat oil in a pan and brown the turkey strips in batches. Transfer everything to a large pot. Brown the gnocchi in the pan and add them to the meat. Then sauté the onions, press in the garlic, and about 5 minutes later, add the chanterelles. Shortly after, add the zucchini and tomatoes. Deglaze with the stock and simmer until the vegetables are still firm to the bite. Finally, add the cream, coconut milk, herbs, spices, and feta cheese, bring to a boil, and serve.
