Ingredients for 4 servings:
- 800 g chicken breast
- 1 lemon(s)
- 8 garlic cloves
- 600 g mushrooms, brown
- 2 onions
- 2 tbsp rapeseed oil
- 800 g leaf spinach
- 30 g butter
- 1 lemon(s), the juice
- nutmeg
- salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour
Low-carb
Slice the lemon and garlic. Quarter the mushrooms. Dice the onions. Wash the chicken breast and pat dry, season with salt and pepper, and brown. Sauté the spinach with butter and onions, season with 1 tablespoon of lemon juice, nutmeg, salt, and pepper. Place the spinach in a baking dish, spread the mushrooms on top, and place the chicken breast on top. Place the lemon and garlic slices on top of the chicken breast and bake in the oven at 180°C for about 25 minutes.
