Chicken Wrapped in Ham and Asparagus

Ingredients
 

  • 1 bunch White asparagus
  • 1 bunch Green asparagus
  • 600 g Chicken breast fillets
  • 6 slices Parma ham
  • A few sprigs of thyme
  • 0,5 bunch Chervil
  • 2 tbsp Olive oil
  • 1 Orange
  • 1,5 tbsp Honey liquid
  • Salt pepper

Instructions
 

  • Wash both types of asparagus. Peel the white asparagus. Cut all the asparagus into oblique pieces. Cut the chicken fillets into three pieces. Sprinkle with salt and pepper. Halve each ham slices. Cover each piece of chicken with half a sprig of thyme, then wrap half a slice of ham.
  • Heat 1 tablespoons of oil in a large pan. Sear the meat on each side for approx. 2 - 3 minutes. Then place in a baking dish and cook in a hot oven at 100 degrees for approx. 20 - 30 minutes.
  • In the meantime, heat the remaining oil in the pan and fry the white asparagus in it for 10 minutes. The green asparagus doesn't take that long, dswg. only add after approx. 5 minutes. Squeeze the juice from the orange and mix it with the honey. Pour into the pan and simmer a little. Season to taste with salt and pepper. Pluck chervil and sprinkle on top. Arrange everything together.
