Ingredients
 

  • 1 Can Chickpeas, drained weight 225 g
  • 60 g Soft sun-dried tomatoes; Soft tomatoes
  • 1 Msp Harissa paste
  • 1 Pc. Garlic clove, finely chopped or squeezed
  • 50 ml Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Dried Italian herbs
  • 3 tbsp Olive oil
  • Salt pepper
  • 1 tbsp Chopped fresh parsley for sprinkling

Instructions
 

  • Drain the chickpeas in a colander and rinse thoroughly with water. Roughly dice the soft tomatoes. Puree all ingredients finely and season with salt and pepper. Depending on the desired consistency, add a little vegetable stock or oil. Serve sprinkled with chopped parsley.
