Ingredients
- 1 Can Chickpeas, drained weight 225 g
- 60 g Soft sun-dried tomatoes; Soft tomatoes
- 1 Msp Harissa paste
- 1 Pc. Garlic clove, finely chopped or squeezed
- 50 ml Vegetable broth
- 2 tbsp Tomato paste
- 1 tsp Dried Italian herbs
- 3 tbsp Olive oil
- Salt pepper
- 1 tbsp Chopped fresh parsley for sprinkling
Instructions
- Drain the chickpeas in a colander and rinse thoroughly with water. Roughly dice the soft tomatoes. Puree all ingredients finely and season with salt and pepper. Depending on the desired consistency, add a little vegetable stock or oil. Serve sprinkled with chopped parsley.
