Chickpea Burger Patties

Ingredients for 4 servings:

  • 200 g chickpeas
  • 1 onion(s)
  • 2 tbsp olive oil
  • 2 eggs
  • 150 g quark, 20% (cottage cheese)
  • 3 tbsp olive oil
  • 100 g breadcrumbs
  • 4 tbsp parsley, chopped
  • 1 tbsp rosemary, chopped
  • 2 garlic cloves
  • Olive oil for brushing
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 40 minutes

Soak the chickpeas overnight and then cook for another 15 minutes if desired. Dice the onion, roast in olive oil, and let cool. Drain the drained chickpeas and purée them with the eggs, curd cheese, and olive oil until slightly soft. Stir in the breadcrumbs and onions, press in the garlic cloves, add the herbs, mix well, and season with salt and pepper. Let rest for a few minutes, then form into 8 patties, brush with oil, and grill or pan-fry. A great vegetarian alternative for grilling! Serve with herb or arugula sauce.
