Chicory and blueberry salad

Ingredients for 2 servings:

  • 250 g chicory
  • 1 large mandarin orange(s) or clementine
  • 130 g blueberries, (blueberries), fresh
  • 70 ml low-fat yogurt
  • 10 g sugar
  • 20 g almond(s), chopped

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

First, halve the chicory, remove the stalk, and then cut the chicory into strips or pieces. Everyone prefers something different; I like to chop it quite finely. Next, peel a large tangerine, then chop it, and add it to the chicory in the bowl. Wash the blueberries, drain well, and mix with the chicory and the tangerine pieces. Mix the low-fat yogurt with the sugar in a small bowl, add the chopped almonds, and pour the mixture over the chicory, tangerine, and blueberry salad, mixing gently. Very quick and easy to make—low in calories and packed with vitamins—and eat immediately after preparation.
