Kohlrabi and apple salad with tarragon

Ingredients for 2 servings:

  • 280 g kohlrabi
  • 140 g apple
  • 2 tbsp tarragon, chopped, more if desired
  • 1 ½ tbsp walnut oil or rapeseed oil
  • 3 tbsp balsamic vinegar, light
  • some salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Pluck the tarragon leaves from the stems and roughly chop them. Mix the oil, vinegar, and spices into a salad dressing and stir in the tarragon. Peel the kohlrabi, quarter the apple, and remove the core. Coarsely grate both and immediately mix with the salad dressing to prevent the apple from turning brown. Let it sit in the refrigerator, stirring occasionally.
