Ingredients for 4 servings:
- 3 chicory, approx. 500 g
- 1 pear(s), quarter, pitted, thinly sliced
- 2 apples, red-skinned, quartered, pitted, thinly sliced
- 250 ml kefir
- 1 tbsp lemon juice
- 1 ½ tbsp honey
- 75 g walnuts, crumbled
- pepper
- Salt

Remove the chicory stem in a wedge shape, reserving a few leaves for garnish. Cut the remaining chicory crosswise into strips and mix with the pear and apple slices. Make a sauce from the kefir, lemon juice, honey, and walnuts. Season generously with salt and pepper, and toss with the salad ingredients.
