Chicory soup

Ingredients for 4 servings:

  • 3 chicory
  • 1 onion(s)
  • ½ stalk(s) leek
  • ¼ apple
  • 1 tbsp butter
  • ½ liter of water
  • 1 tbsp vegetable broth, instant

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and chop the chicory, onion, apple, and leek. Melt the butter and sauté the onion. Fill with water, add the vegetable stock, and add the chopped ingredients. Bring to a boil, then simmer for 15 minutes. Blend the soup as needed. Cook the soup with the lid uncovered to prevent the chicory from tasting bitter. This soup is ideal as a light starter.
