Sweet lettuce – also as a dessert

Ingredients for 4 servings:

  • 1 head of lettuce, crisp, fresh green
  • 1 lemon(s)
  • 8 tbsp sugar
  • ½ liter of milk, cold fresh milk (not UHT milk)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the lettuce leaves, trim, rinse thoroughly, spin dry, and then tear into bite-sized pieces. In a salad bowl, mix the juice of half a lemon with 6-8 tablespoons of sugar and let it stand for two or three minutes. Slowly but quickly mix the cold milk with the lemon juice, stirring/beating vigorously, ideally with a whisk. Add the lettuce to the marinade and mix well to ensure all the lettuce leaves are coated with the marinade. Finally, sprinkle 1-2 tablespoons of sugar over the finished salad. This sweet salad tastes excellent as a side dish to hearty meals, as a dessert, or as a snack on hot days. Note on the marinade: If the milk is too warm, is not stirred vigorously enough, or too little sugar is used, there is a risk that the milk will curdle. As a rule of thumb for the amount of sugar: Sprinkle in enough sugar to just absorb the lemon juice. This means that the sugar-juice mixture should be thick when stirred, before the sugar dissolves. Without salad, the marinade makes a refreshing milkshake and can be served with a sprig of fresh mint!
