Ingredients for 4 servings:
- 8 m.-large chicory
- 1 lemon(s), the juice
- 80 g Parmesan cheese
- 150 g bacon, lean
- 60 g butter
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the chicory. If necessary, remove any unsightly outer leaves and carefully trim out the stalk, leaving the leaves still together. Bring 2 liters of water to a boil in a large saucepan with the lemon juice and salt. Add the chicory and simmer for 12-15 minutes until soft. Meanwhile, use a vegetable peeler to shave the Parmesan cheese into strips. Cut the bacon into strips and fry slowly in a frying pan in its own fat until crispy. Carefully remove the chicory with a slotted spoon, drain well, and arrange on a warmed platter. Add the butter to the bacon and let it foam. Spread over the chicory and sprinkle with the Parmesan cheese. Serve immediately. Serve this uncomplicated vegetable dish with baguette or boiled potatoes.
