Chili con carne from the crockpot

Ingredients for 2 servings:

  • 250 g minced beef
  • 2 onions
  • 1 can of corn
  • 1 can kidney beans
  • 1 can tomatoes, chopped
  • 1 tbsp tomato paste
  • 3 bell peppers
  • 2 bars of dark chocolate
  • salt and pepper
  • Paprika powder
  • chili flakes

Working time approx. 15 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 15 minutes

Dice the onions and bell peppers. Heat oil in a pan and fry the ground beef and onion until crispy. Season with salt, pepper, and paprika. In a crockpot, combine the corn, kidney beans, bell peppers, chopped tomatoes, chopped chocolate, and the onion-ground beef mixture. Spread 1-2 tablespoons of tomato paste over the mixture. Fill the empty tomato can with water and add it to the crockpot. Mix everything well and season with salt, pepper, and chili flakes. Simmer on “High” for about 3-4 hours, stirring occasionally if necessary. Add more liquid as needed. Serve with grated cheese or a dollop of crème fraîche.
