Ingredients for 12 servings:
- 500 g beans, black, dried
- 1 ½ kg minced beef
- 2 onions, red
- 1 vegetable onion(s)
- 2 tsp garlic, freshly chopped
- 4 pointed peppers, red
- 4 m.-sized carrot(s)
- 2 m.-large beetroot
- 8 tomatoes, dried
- 400 g tomatoes, peeled (can)
- 8 cherry tomatoes, fresh
- 100 g tomato paste
- 1 liter tomato juice
- 2 tsp sea salt
- 2 tsp black pepper
- 2 tsp spice mix (chili peppers)
- n. B. Spice mix for chili con carne
- 2 bars of dark chocolate
- 2 tsp cinnamon
- 100 g mascarpone
- n. B. Clarified butter
- n. B. cheese, grated
- n.e. sour cream or sour cream
- n. E. tortilla chips, eg with peppers
Instructions

Party hit
The day before, place the black beans in a large pot and cover with water. Let them soak for 24 hours, then cook until al dente. Caution: Be careful not to let them boil over. Then drain the water and briefly rinse the beans with fresh water. Set aside. Dice or chop the onions and vegetables according to your preference. Chop the sun-dried tomatoes, for example, in a food processor. Ideally, brown the ground beef in hot clarified butter in batches in a cast iron pot. Combine all the portions in the pot and reduce the heat. At the same time, brown the individual components (onions/garlic, carrots/beets, bell peppers) in a frying pan, then add them one by one to the browned ground beef. Finally, add the black beans and mix everything well. Now add the individual tomato components and all the spices except the cinnamon. Let it simmer for about 90 minutes. Add the chocolate block and cinnamon and stir in the mascarpone, depending on the consistency. Cook for another 30 minutes at a lower heat. Serve with grated cheese, sour cream, or sour cream with tortilla chips. This dish also tastes great reheated the next day. In my opinion, the flavor will be even more rounded. The next day, you can adjust the consistency to your liking with Greek yogurt (10%) or tomato juice, depending on the degree of swelling.
