Ingredients for 1 servings:
- 260 g flour
- 100 g butter or margarine
- 2 eggs
- 1 tsp baking powder
- ½ tsp salt
- pepper
- 4 cloves garlic
- 3 red chili peppers
- 50 g black olives, pickled in herbs (pitted)
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Mix butter, eggs, 250g flour, baking powder, salt, and pepper into a dough. Finely chop the garlic, chili peppers, and olives and mix with the remaining 10g flour, then add to the dough and knead thoroughly. Form into two rolls, approximately 4cm in diameter, and chill in the refrigerator for one hour. Then bake for 20 minutes at 180°C (160°C fan-assisted oven). Allow to cool slightly and cut the rolls into 1cm-wide slices. Bake the slices for another 20-25 minutes at the same setting. Store in tins to keep the savory cantuccini nice and crispy.
